What better way to celebrate Cinco de Mayo than a weekend camping trip filled with festive foods. These campfire nachos offer the best of both worlds: easy & delicious.
1 Bag of tortilla chips
1 Jar queso
4 oz. shredded Monterey jack cheese
1 lb. flank steak
1 Jalapeno, roughly chopped
1 Cup cilantro, roughly chopped
1 Cup pico de gallo
1 Cup guacamole
1.) Grill the flank steak until medium rare. Remove from grill and let rest before slicing. Chop for the nachos.
2.) Using 1 regular sized cast iron skillet, layer a handful of the tortilla chips and top them with the flank steak and shredded Monterey jack. Let cheese melt over fire.
3.) Once melted, remove and drizzle with the queso. Then, sprinkle with the pico de gallo, guacamole, cilantro, and jalapeños.
4.) Pair with a cerveza & enjoy your nachos while you Enjoy the Outdoors.
